Fir Needle Tea

Fir needles make for a delicious, aromatic tea. Their bright citrus-pine notes are reminiscent of orange, clementine, and even grapefruit. Like other edible conifers, fir offers gentle support for the respiratory system, which is perfectly captured in a warm, soothing brew. Be careful to gather true fir (Abies species) and take care to avoid yew.

Ingredients (serves 4)

  • 1 small handful (about ½ cup) fresh fir needles

  • 4 cups water

  • Optional: honey to taste

Method

  1. Rinse the fir needles well. Lightly crush the needles with a rolling pin to release their aroma. Add to a teapot.

  2. Boil the water in a kettle, and top up the teapot (alternatively, heat the water in a pan then add the needles to the pot, covering with a lid).

  3. Steep for 10 – 15 minutes.

  4. Pour through a fine strainer into mugs. Sweeten with honey if desired.
